All things Valentines

Valentines, it's that time of year again when all things chocolate and sweet come out to tempt you into just one piece. Here are a few things that I have cooked up to help stop the valentines chocolate war. :)

White Chocolate Covered Strawberries with a Dark Chocolate Drizzle 

To make these beauties you will need: 
4oz cocoa butter
1/4 cup heavy cream
1 T coconut oil
sweetner of choice I used 2 squirts of Vanilla Sweet drops 
1 square of 85% dark chocolate
Frozen Strawberries

What to do:
Melt the cocoa butter and coconut oil together
whisk in the heavy cream and sweetner.
melt dark chocolate.
drop frozen strawberries into white chocolate mixture and then use a spoon to place them on a pan with parchment paper. I recommend doing this step twice. 
Take spoon and drizzle melted dark chocolate on top. 
Eat and enjoy!


Heart Shaped Pancakes 

I made these using Briana Thomas 5 ingredient Waffle and just added a little red food coloring (the kids loved this).



I used the left over Pancakes to make this breakfast sandwich for the Hubs <3
(dont mind my darkened top :/ this one got a little over cooked when I stepped away to grab a baby..)

The coveted 4

Its amazing to think that what different roads our THM Journeys take us. Here I was plucking along unhappy in my post baby body. Begging for the scale to move and my pants to suddenly fit again. 
 (right, is me)


I pushed myself to press on. Trying to give myself grace. Trying to remind myself that it takes time. EVEN if you never get back to where you were healthy is better. After a month I lost some pounds.. but then 3 months later there I was stalled. fluctuating between the same infuriating 5 pounds. Pleading with the scale to move. But though the scale stopped moving I began to notice that I could keep my pants up (like in a wonderfully infuriating way, haha). Then I noticed I could pull them on and off without unbuttoning them. Which brought me to last night. I just desperately wanted a pair of pants that would stay up. Feeling brave I reached for an 8. I couldn't believe my eyes when they pulled up buttoned. So feeling unsure and scared of getting shot down I reached for the 4 and to my utter amazement they fit, perfectly. Thank you Jesus!

The return of the Pizza Bites

Sometimes there is just nothing more glorious than pizza bites! So I have set out to create a healthy pizza bite I can make AND freeze to eat at a later date. So with the help of the Fooled ya Pizza crust found on page 214 of the THM cookbook I have finally done it! 

What you will need:
THM Cookbook
parchment paper
Tinfoil
baking pans
food processor
2 16oz bags of cauliflower
1 1/2 cups of egg whites
4 cups of mozerella
Garlic Powder
italian herbs
Tomato Sauce
Pizza Toppings

What to do:
Prepare Crust as directed in cook book
Preheat oven to 450
place parchment paper in pan
Make little pizza bite patties
Bake said patties for 15 minutes
take out and remove parchment paper to cooling rack
If eating immediately you may add toppings here and then broil for 2-5 mins until golden brown.
If you are planning to freeze allow to cool completely and then add desired toppings
once topping have been placed wrap in tinfoil (to avoid sticking together this really is necessary) and place in Freezer bag. I use Quart size and put up in individual size portions but you could use one big bag 

You can cook these in the over at 450 for 12 mins or you can microwave for 60 secs or until cheese melts.

The Brownie War

Is there really anything better than a goof fudgy brownie? Having given up white flours and sugar I was left wondering, how will I make brownies?! Well never fear ladies I have the answer to all your brownie troubles and it is both healthy and delicious!  The answer ladies is not at all what you might think. It is a vegetable that you IF you have even eaten you've probably only eaten battered and fried, Okra.

So I got to baking and I tried two different recipes. I baked and then chilled over night. The next night after dinner I served to my unknowing husband who was unaware of the superfood lurking within.  He LOVED them. They taste just like a normal brownie.  We tried these brownies side to side and we love them both but for different reasons. The first one we tried comes from the THM cookbook, Page 314, cry no more brownies. This brownie is gooey and fudgy, and very very rich. They're very good with a scoop of vanilla ice-cream. 

The second recipe was by a brilliant woman named Briana Thomas, the recipe is called Superfood Brownies.  These were fudgy but more cakey texture than the goey texture of the cry no more brownies. They were a perfect balance of chocolate goodness. According to the hubs these were better by themselves where as the cry no more brownies needed something to tamper down the richness. Personally I liked the richness of the cry no more brownies. 

So no matter your brownie preferences okra has the answer ladies. For those doing THM these brownies are both S. The cry no more are a Heavy S where as the Superfood Brownies would be a Deep S.

The Beginning

Back in September my family and I began a journey to a new and healthier life. After pouring over the books and the blogs and finally I came to THM. What is THM you ask, THM stands for Trim Healthy Momma. Basically it is all about separating your fuels, eliminating sugar and other harmful chemicals and preservatives. You can read more about it here. The sisters do an amazing job of making this information easy to understand and put into practical practice. My goal in this blog is to explore recipes, give helpful tips I've discovered, and share our THM journey to healthy with you!


Above is a picture of my Husband and I taken over the summer. At this point he weighed 320 (at 6ft) and I weighed 185 (at 5'2). After starting this plan in September and falling off the wagon from Thanksgiving to Christmas Below is a picture of us taken in January. 

I am down to 135 and he is down to 305. 


Now I say all this just so you know a bit about who we are! Now we also have two adorable Boys (1 and 2) (eek)
